Green coffee - Colombia - Inza Blend - Caturra/Colombia - washed

This is a washed coffee from the Colombian region of Cauca, known for its mountains and volcanoes. Grown at altitudes of 1600 to 1850 meters above sea level, this coffee comes from high altitude growing areas.

This coffee is grown by a group of small producers in the municipality of Inza, Cauca. The area is rich in minerals, making it ideal for growing coffee.

The small producers joined forces in 2015 to achieve larger volumes and get a better price for their coffee. They have worked with the local association ASORCAFE, but prefer to process their coffee directly on the farms and have a more direct connection with the roasters.

In 2020 we exported their coffee to Europe for the first time. Unfortunately, since the COVID pandemic we have not been able to visit them again.

The production of the original 10 farmers is 20 tons per year, but they plan to collaborate with surrounding farms to increase their volume.

Preparation:

Washed processing with 12-36 hours of fermentation. The coffee is harvested at the optimal stage of ripeness and then sorted by floating to remove less dense beans.

After floating, the coffee is depulped and placed in open tanks where it ferments without water. After fermentation is complete, the coffee is washed 2-3 times before it is ready to dry.
