Farm: El Silencio - Description

Coffee cultivation with Sara Gutierrez - Finca El Silencio

Sara Gutierrez is the fifth generation of a family of coffee farmers who combine the heritage and science of growing coffee in the heart of Colombia's majestic central mountain range. On the farm in Buenavista, Quindío, the coffee plants benefit from a unique microclimate created by the warm winds of the valley and the cool mountain winds. This special climate allows the coffee cherries to ripen slowly.

Surrounded by walnut trees, guamos, plane trees and banana plants, the coffee plantations receive natural shade and partial shade, creating the ideal environment for growing high-quality coffee.

Processing specification:

Harvesting and selection: The ripe coffee cherries are carefully harvested by hand. To ensure that only the best cherries are processed, a double flotation process is carried out. This means that only the highest quality cherries are selected to guarantee the perfect coffee.

Fermentation:

The best cherries are fermented for 168 hours in special containers in the coolest places on the farm.

Drying method:

After fermentation, the cherries are laid out on African drying beds until they reach a moisture content of 10%.

Stabilization:

When the coffee has reached a residual moisture content of 10-11%, it is packed in GrainPro bags and sisal sacks. The coffee is stored in a cool and well-ventilated place for a month before being dehulled for export.

Sara Gutierrez's coffee combines tradition, science and the unique climatic conditions of Buenavista to create an extraordinary taste experience.
